Chocolate Coconut Drops Recipe from Little Susie Home Maker


Do you like recipes for candies?
I want to share with you this wonderful candy recipe. I have loved making these for years. It is a very fun and simple recipe and the results are very yummy.


I redid the image and decorated it up with my editor. It came from The Betty Crocker's Boys and Girls Cookbook. I love this vintage cookbook and it has great recipes.

Cream Cheese Danish Squares Recipe

Hello everyone! I have a really good recipe to share with you today.
It is one of those pretty easy to put together treats that most everyone will like to eat.

 Cream Cheese Danish Squares

2 cans refrigerated butter crescent rolls
2 (8oz) packages cream cheese (softened)
1 cup sugar
1 teaspoon vanilla
---
1/4 cup butter (melted)
---
1 teaspoon cinnamon 
1/2 cup brown sugar

Preheat oven to 350* F

  • Open one can of crescent rolls and spread out evenly into a rectangle pinching seams together with fingers on the bottom of an un-greased baking sheet. 
  • Combine softened cream cheese, sugar, and vanilla in a mixing bowl and beat until creamy with a hand mixer. (Or you can use a spoon)
  • Spread mixture over crescent rolls with a spatula. 
  • Unroll and place remaining crescent rolls over mixture. (They don't have to be pinched together)
  • Brush melted butter over the top of pastry.
  • Mix cinnamon and brown sugar and sprinkle over top.
  • Bake for approximately 25 minutes, or until done.
  • Let cool in pan, then cut into squares.
Yield: 24 squares 

These are a great snack with coffee or tea.

I know I should only eat these on occasions, and then follow my next meal up with a salad only!!
LOL! I wish baking wasn't so much fun to make and to eat!
But this is a good one, so I hope you try it out!

I have been pretty happy about our almost daily rain showers, but have also been a little displeased with the lack of outdoor time I can spend with my kids before school starts. My Son will be starting classes next week.
Seems too early to me, but that is how they do it here. At least we still have weekends to try and have a little fun, in between home work. I always wish summer break lasted longer with my children.

Yummy Nachos


Hi everyone! How are you doing? 
I thought it would be fun to show you one of my favorite lunches I like to make.

It is a plate of warm yummy Nachos!

I start by placing chips on the plate, then add refried beans, cooked ground beef, and add cheese. 
Then pop it in the microwave to melt cheese.
Then I add shredded lettuce, salsa, diced tomatoes.

This is ready to eat! I can't wait!
 So I put it on the table and then go in the kitchen for some cold drinks!

Oh, boy I can't wait to dig in....

What is this?  This looks like it has been devoured!!

My two teen age kids are standing there grinning ear to ear with cheese on their lips!
"Boy, that sure was good, Mom!!, Thanks!!"

Back to the drawing board.

Kelly's Hearty Kraut Burgers

Today I am happy to share with you my sister, Kelly. She has been making great meals since she was a teenager. Today she is going to share one of her recipes that she has added her personal twist. I can tell you, "It Rocks!" ..  Kelly's Hearty Kraut Burgers!

Hi everyone! I enjoy creating fun dishes that I love to share with family and friends. I also, live a very busy life and love to take short cuts when I can. You will find a few in this recipe that are great time savers.

After trying other versions of Kraut Burgers, I decided it was time to create a burger that was to my own tastes and improve upon what I found out there. This is the first time I tried this recipe. I will admit adding the potatoes were my idea to make it heartier.

I also used the red cabbage because that is what we like. I didn't get it cut small enough before cooking so had to cut it down a little after it cooked. The cooked red cabbage is very prominent in the meat mixture. We liked it better because it is a sweeter taste.

I also added the dill pickle juice and mustard because I don't enjoy the fairly bland flavor of the typical kraut burgers that I have tried. I love the flavor of dill pickles and mustard in rouladen, so this is where I got my flavor inspiration.


 Kelly's Hearty Kraut Burgers
  • 12 frozen yeast dinner rolls (I used Rhodes brand)
  • 1 lb ground beef
  • 1 medium onion halved and sliced thin
  • 1/2 head cabbage, sliced thin*
  • 1 can diced potatoes or about 1 1/2 c. fresh potatoes, diced small
  • salt & pepper to taste
  • 1 Tablespoon spicy brown mustard
  • 1/2 cup dill pickle juice

Let dough thaw and rise.

Preheat oven to *350 F

Brown beef, drain and add onions and dash of salt and pepper. Let onions cook until translucent. 
Add sliced cabbage, and pickle juice, cook until cabbage is tender. (*note.. Make sure cabbage is cut small enough to not be "BIG" bites) 
Add potatoes and mustard. Lower heat and simmer 5 minutes.


 Let filling cool and transfer to bowl to cool in refrigerator until able to handle.
Place dough on floured board and roll out to 6" circles. Can also be stretched like pizza dough. 
Place about 1/4 cup of meat mixture in the center of the circle.


Bring edges to close at top, pinch edges together. 


Place gathered side down on a greased cookie sheet and bake at 350* for 20-25 minutes. 

Can be served with a spicy mustard or brown gravy. 

To make ahead, wrap baked burgers in plastic and refrigerate, they can be microwaved 45 seconds for an awesome meal.

Good Eggs and Good Jam


Today both of my children are in school, hubby has gone to work and here is the beginning of this next little time in my life. The summer has been quick and I am not ready for it to start winding down. I am that mom that is so happy when her kids are on break, not the one that can't wait until they go back. I often wonder why moms feel that way?


The yard is dry and the allergens are kicking in again. Colorado is a beautiful area to live in when Fall comes. Hubby was helping get the Little Red Barn all cleaned out and ready for winter again. We needed to repaint the wooden floors. He will have to work on some new roosts that I want changed for making it easier to get in and out of this winter. Boy he is nice to do this for me! Here is a little of the mess that was inside that needs to find another place. Why did we put that in the coop?

I have a little nursery side I love to brood the chicks in. It is just perfect. Chicken wire is attached to the framed wall;  to see through to the other chickens that already are here. I decided to order some more chicks this fall, as soon as we get things ready for them.


 I wintered over the babies last year and I found that I love doing it in the fall instead of the traditional Spring. Mainly because Fall here is like Summer, and Spring is like Winter. It is so much easier to keep them warm those first few weeks of life! By the time Spring comes they are very acclimated to each other and they get along pretty well with out all the barnyard squabbling that can go on.


I let my chickens free-range most of the summer. Yes, that means that a few have mysteriously vanished. But they are so much happier and healthier. 



They also have a nice sized fenced in run that gives them plenty of well protected outdoor time.
The eggs that they produce are so rich and yummy! Nobody can ever get enough of them. I always have people that want these fresh eggs! I can't blame them, nothing like those sold at the grocery store!

 I went ahead and made two batches of jam, left the rest for the birds. I had enough to make 100 batches! I kinda wished I had made more than two batches , but there is always next year! Now my wild plums are doing great, and just turning ripe this week! I see some more Jam making on the horizon

Speaking of Jam. Donna at Donna's Lavender Nest and I decided it would be fun to trade a jar of jam. So she sent me this wonderful jar of Peach Jam and I sent her a jar of mine! Oh, gosh it is so good! She is such a sweety, do you know she even slipped in this amazing fabric. It has red on white polka dots and strawberry and cherry bunches printed on it!!!

Man she knows what I like! I still have to figure out the perfect thing to do with this! Thanks so much , Donna!

I tell you, fresh preserves and fresh eggs! Breakfast just couln't get any better!

Little Susie Home Maker's Baked Hake or Cod

Baked Hake Fish Recipe
Recently, I came across some beautiful Hake fish filets. They are considered a white fish and said to be similar to Cod with a mild flavor. Being sure to include fish in our diet is a great way to increase our cardiovascular health and good brain function. So please, count me in!

When it comes to cooking fish. I always love to oven-fry mine. Here is my recipe that I use to oven-fry these wonderful fish fillets. Please feel free to substitute your favorite fish in this recipe!

Susie Home Maker's Baked Hake (Cod)

4 Hake or cod fillets
Juice of 1 lemon, (or lemon juice in a little yellow plastic squeeze container)
4 Tbsp butter
2 Tbsp olive oil
4 cloves garlic
3/4 cup Italian seasoned bread crumbs
1/2 tsp black pepper
1 teaspoon salt
1/2 cup mayonnaise

Preheat oven to 400* F
Place butter, olive oil and 2 cloves of crushed garlic in a small saucepan over simmer. 
Slowly melt butter while stirring occasionally.
Meanwhile, rinse and pat dry the fish fillets with paper towels. 
After the fillets are dried, cover them with lemon juice on both sides. 
Pour the melted butter mixture into a pie plate or shallow dish. 
Next, saturate the fish well with the butter mixture.
In another shallow dish that is filled with the bread crumbs, 
place the fish fillet and turn to coat evenly.
Then you can place the fillets onto a shallow baking pan
 that is coated with about 1-2 Tbsp oil.
Repeat with remaining fish fillets.
 In a small bowl add mayonnaise, pepper, salt 
and remaining 2 cloves crushed garlic and mix together.
Spoon mixture onto the top of the fish fillets on pan.
You can leave this mayo mixture off, 
but this adds a lot of flavor to the mild fish, so I slather it on!
Place into oven and bake for 20 minutes. 
Fillets should be flaky and golden.

Serve on a favorite platter. 
This goes well with a wild rice and roasted veggies, and a simple green salad!

Little Susie Home Makers Best Peach Cobbler Recipe and tutorial

My easy to make Peach Cobbler is always a huge hit with my family and friends. It is so easy to make! You will love the smell as it is baking! I just had to share my recipe with lots of pictures for a tutorial that will have you baking in no time!

Little Susie Home Maker's Peach Cobbler

 1 stick butter (1/2 cup)
2 cups sugar
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon 
2 cups milk
1 large or 2 med cans sliced peaches
2 tablespoons brown sugar

The first thing you want to do, is put the stick of butter into your oblong baking pan. Then place in center rack of oven, then turn the oven on to preheat to 350* F.
The butter will begin to melt in the baking pan. 

Next, mix the sugar, flower, baking powder, cinnamon and milk in a large mixing bowl, into a batter. A long handle wooden spoon works just fine, but you could use a mixer if you like. Stir until well blended, but don't over beat.

 Remove the oblong pan from the oven and place on a hot pad or heat resistant area.
Carefully pour the batter from the bowl over the melted butter. Do not stir. The butter will ooze out to the side, and may not even be completely melted. This is okay.

Next open your canned sliced peaches and spoon the peaches over the top of the batter. 

Place by spoonfuls to evenly distribute. Discard the juice for some other use, but do not add to batter.
Sprinkle the top with brown sugar.

 Using hot pads, carefully place the baking pan back into the center of oven. You may place on a cookie sheet to catch drippings.

 Bake in 350*F oven for 40-45 minutes, or until the batter has puffed up and browned.

 Remove from oven and cool slightly before serving.

 This is really good with a side of vanilla ice cream, if you like.

Serve, eat, and enjoy!
  

A very favorite request of my husband and daughter. The warm taste of this fresh baked batter and peaches fresh out of the oven is just delicious.  When made ahead of time and served at room temperature it is very good as well!  I love to make this Peach Cobbler for birthdays, for dessert and even for brunch. It travels well for pot lucks. I hope you can enjoy this recipe.

Vintage 50's Meatloaf Recipe


Do you like meatloaf?
Today I want to share a recipe with you from one of my favorite cookbooks.
This is a Better Homes and Gardens New Cook Book. It is missing the copyright page, but from researching on the web, I believe it to be 1950's. It has some pretty fun artwork, and fabulous content.
I have had this cookbook for several years now. I found it one day at a local Goodwill store. I just adore it.


Inside there is a penciled star from a previous owner on a recipe that I figure, must have been a favorite. What I want to share today is the 

Everyday Meat Loaf

2/3 c. dry bread crumbs
1 c. milk
1 1/2 lbs. ground beef
2 beaten eggs
1/4 c. grated onion
1 t. salt
1/2 t. sage
dash of pepper

Oven  350*
Soak breadcrumbs in milk: add meat, eggs, onion, and seasonings; mix well. Form in individual loaves; place in greased muffin pans. Cover with Piquant Sauce* (page 348).
Bake in moderate oven (350*) 45 minutes. Makes 8 servings. Or form one loaf in 8 1/2x4 1/2x2 1/2-inch pan. Spread with sauce; bake 1 hour.

*Piquant Sauce
Combine 3 tablespoons brown sugar, 1/4 cup catsup, 1/4 teaspoon nutmeg, and 1 teaspoon dry mustard.
I took some personal liberties, and used packaged and seasoned bread crumbs, I also substituted a canned salsa, for the topping. Other than that, I did try to keep the making of this original.

It was a very simple meatloaf to make. The end result baked rather nicely and was firm and held together to slice.

My family and I enjoyed it for dinner, but it was just a little bland for my taste. But a very good base recipe to start a meat loaf on. And if only a few ingredients on hand, this makes a simple meatloaf to prepare.

Overall, I had fun preparing this and my family did enjoy eating it!

So, maybe you will enjoy making this 1950's style meat loaf, too.
